Fennel, Apple and Orange Salad

Let's see by a show of hands, how many of you have cooked with Fennel?  Hmm.

Okay. How many of you have even tasted Fennel?

Allow me to introduce you to a fresh-tasting, delightful veggie that you just might like! Fennel looks a little like celery with a fine hair-like top.  It's pretty and will remind you of licorice, but with a bright, crisp flavor.

This salad is a pleasant change from the usual lettuce greens salad, adding some variety to your repertoire of uncooked side dishes.


Fennel, Apple and Orange Salad (makes 2-4 servings)

1 medium uncooked fennel bulb, thin-sliced

3 medium apples, Macintosh or Gala preferred, diced

4 medium oranges, sectioned, seeds removed (canned and drained mandarin oranges can be substituted)

1 medium uncooked red onion, thinly sliced

1 Tablespoon frozen orange juice concentrate, thawed

1/2 teaspoon Kosher salt

1/2 teaspoon ground cinnamon

1 head Boston Lettuce, torn (or any salad greens you have on hand)

Combine all ingredients, except lettuce, in a large bowl. Toss with lettuce and serve
